I am planning on hosting a server for a game but I want to have the fastest linux based OS of 2010. I have 8gb ram, an i7 860 processor at 2.8ghz, and 1tb storage.

Go for a smaller distribution like Puppy Linux or Darn (****) Small Linux if you want speed, or go for a little larger distribution like OpenSuse, Mandriva (formerly Mandrake Linux), Ubuntu, Debian, or Fedora.
There’s literally hundreds of Linux distributions (‘distros’) and there is no "fasted" distribution.
I would have to say that Red Hat Enterprise Linux 6 would be your best bet. You can wait a couple of more weeks for CentOS 6 to come out. But, yeah for a major server, Red Hat / CentOS (which are the same thing by the way, CentOS is just without you having to pay for support), is the way to go.

Red Hat has some real major upgrades: http://www.theregister.co.uk/2010/11/12/rhel_6_review/
