I’m basically looking for a Windows XP/Vista alternative….I don’t care about programming or running a server….I want basic applications like Mozilla Firefox 2.0, a mail program, image editor, etc….

I would go with XUbuntu. It is the Ubuntu distribution with the XFCE Desktop environment which is really user-friendly and really cool.
Ubuntu is really easy to install. I started the installation on a laptop once, took a shower, and it was working perfectly when I got out.
It comes with Mozilla Firefox and Thunderbird already installed for web and mail, and GIMP for image editing. For even more cool tools for audio, graphics, and video you can download and install Ubuntu Studio.

Try Mandriva 2007 or Ubuntu Feisty Fawn.
Ubuntu!!! Most definitely.

PCLinuxOS is generally considered the easiest distribution for ex-Windows users. But Ubuntu/Kubuntu is pretty popular too.
