I want to create dedicated servers for my friends to play on. I know that Linux is very stable and i would like to know which one is the best for running stable servers for high end PC games.

It really doesn’t matter. The distributions are all the same effectively. They have the same kernel (linux) and they run the same software (all software written for linux). If you are creating a server, you’re fine as long as you pick a mainstream distribution that can be stripped down to the basics.
Debian, redhat, and slackware. Redhat requires a paid subscription. Debian and Slackware both come with the option of encrypting the hard drive. Of these two, Debian is the easiest to build. You will need to go through the apt repositories. Possibly add all of them and finding what programs you will need.
Be sure to read on how to further secure you box-server and setting up rights.
Linux is a good start into security but it’s useless if you don’t prepare.
