You should be able to remove programs with Add/Remove programs through your main menu. However, that’s not likely to be the problem – simply having a program installed shouldn’t result in a noticeable performance degradation.
Linux runs fast and light by default. If you’re finding it slow, it’s likely because you’ve installed a lot of programs that start with your computer; check what you’ve got installed and tell programs not to start with the computer.
Alternately, you could check whether your computer is bottlenecking on RAM or CPU. Open the system monitor (should be under "Accessories" or similar in your menu) and check whether you’re using all the Memory or CPU on your computer. Using all of the memory? You’re running too much at once. Using all of the CPU? You’ve got some greedy application that’s using up all of your processor; look a the processes tab and you should be able to figure out which one it is.
It’s also possible that your hard drive is getting full, which might slow the system down somewhat. Free up space by deleting data files like movies and music and any games you aren’t playing any more – all of these are HUGE in comparison to most of the applications you’d have installed.
As Jordan said it is not likely that too many programs is the cause of your computer slow down. A full hard drive is much more likely.
Here are some links on how to remove programs in mandriva. Good luck
